- I got into a souffle kick awhile back and found that they are great at
hidding vegetables. The problem with souffles are that there are no
leftovers, because they do not keep well in the refrigerator. So you have
to make sure you don't make too much.

- This recipe uses shredded zuchinni and I hated squash when I was a kid.
However, it is something that will grow on you. Enjoy.

- roasted tomato soup
- This recipe came out of a magazine article on the testing tomato soups.
They played with fresh tomatos and sundried tomatos, but found that roasted
canned tomatos gave an outstanding flavor. I was surprised until I tried
it. I have modified it to my taste, but it is a good soup on a cold day.
My SO claims she will never go back to Campbell's soup after eating mine.

- I found recipe in a gourmet cookbook and was amazed how simple it was
to make. I thought I would give it a try. It is simple to make and is
one of the meals that does not require alot of attention. I have used
Texas sweet onions and result is something to curl up with on a cool night.
I will have to try it with other types of onions, but one bowl hits the
the spot! Enjoy.

red pepper soup
- After trying roasted tomato soup, I thought I would try my hand at a
roasted bell pepper soup. The soup is not quite there, but I am pleased
with the results so far. I will keep trying to improve on it. Enjoy my
work in progress. You can spice it up for your own taste.
- leek and potato soup
- Leeks are mild flavorful onion and when combined with potatos make
a comfortable soup. This recipe is my own creation, in other words, I stole
part from one recipe and another part from another and so on and so on. It
is also a work in progress, but I enjoy it.

- Farm Patch(local produce stand) had some red bell peppers on sale and
they looked to good to pass up. This dish is the results of my
experimentation. I was pleasantly surprised with the results. Enjoy.
- roasted asparagus and onions
- This meal is so simple that I can't believe how good it is. If you
have a cast iron skillet, you are set. This meal is one of the standards
around the house. Make sure you use fresh ground pepper and sea salt.
Sea salt is the only way to go. I adds a taste, which has spoiled me for
table salt(iodized). ARGH!

- The recipe is modification of a Moosehead recipe. I want to do an
Indian dish with cauliflower and I found this one. It is a hit on
a weekend night and generally disappears with in acouple of days. Someone
eats it for lunch during the week and we end up not having enough for
dinner. Needless to say, it is good.
