Ingredients
- 1 sweet or white onion
- 1 lb of asparagus
- 1/4 cup of olive oil
- 1/4 cup of grated parmesian cheese
- salt
- fresh ground pepper
This meal is a quick one to prepare when you are in a hurry but don't
feel like a salad or sandwich. This meal is enough for two hungry people,
it is not worth saving as leftovers.
- Preheat the oven to 400 F.
- Remove the tough bottom portion of the asparagus and 1/4 the onion. Place
in a tub of water to soak while the oven comes up to temperature. ~15 minutes.
- Place the asparagus and onions into a cast iron skillet and drizzle the
olive oil over them. Coating the onion and asparagus. Add salt and pepper
to the dish.
- Place the skillet into the oven for 30 minutes.
- While the asparagus and the onions are roasting, prepare a pasta to
go with it. I like fettuccini or linguini.
- Remove the asparagus and onions from the oven and serve over the pasta.
Spoon the juice over the dish and add parmesian cheese. I like this dish with
fresh tomato slices.
